 pickled beetroot
i'm just about to have my first go at pickling beetroot, when i've cooked the beets and boiled the vinegar do i add it all to the jar hot or should i wait untill they're cold? thanks

Hi Meow,
I guess you have done this now, but when I researched this last year I discovered that the vinegar should be added while it is hot, so I had the beetroot just cool enough to handle and slice, and then quickly brought the vinegar to boiling point and poured it on and sealed up the jars.
