Vegan Veg - Recipe: Kala Be Thoke

Regular readers may recall that, last summer, I was espousing the global nature of flatbreads made with chickpea flour. The versatility of the chickpea allows it to be used in so many other ways. In the UK, I would hazard a guess that, most chickpeas are consumed as hummus (though I may be singularly responsible for most of that consumption). In Sicily and Liguria, chickpea flour is used to make a dish similar to polenta. One of the most popular street foods in Palermo is Panelle, where the ‘polenta’ is fried before being eaten with bread. In Burma, they are used to make tahu, similar to soya bean curd tofu.

Plant and force rhubarb - Rhubarb is a very hardy crop that thrives on the cold. It is one of the first to be ready to harvest in the season, the strong shoots emerging from January onwards with the first harvests usually beginning in March. Give plants a generous mulch of straw, leafmould, garden compost or well-rotted manure now to encourage them. However, plants can be coaxed to produce early sticks by forcing – either in the ground or by lifting and placing under the greenhouse bench or in a shed.
