Vegan Veg - Recipe: Pomegranate cocktail

Other than eating a pomegranate with a pin, an experience not to be sniffed at, most people in the UK won’t encounter this fruit. A crying shame in my opinion because, with a little preparation, this gorgeous looking and tasting fruit can open up the world of near eastern cuisine and beyond.
Pomegranates can be used in both savoury and sweet dishes or used to make refreshing drinks. Pomegranate syrup can be used to add depth to soups and stews.
In the unlikely event that you have any fruit left over, the chickens love them!
Makes one serving
60ml vodka
30ml Triple sec
Juice of 1 pomegranate
1 tablespoon lemon juice
Crushed ice
Method
1. Put the ice into a martini glass.
2. Put the other ingredients into a cocktail shaker and shake vigorously.
3. Pour over the ice and serve.
