Students encouraged to veg out

Can cook, will cook! Students are proving they can prepare more than just beans on toast…

The University of Manchester welcomed 8000 new students last month with a gift of a night vegging out with their flatmates. In partnership with Greater Manchester box scheme company Veg Box People and the Kindling Trust, each student flat was given a free veg box and challenged to cook and share a meal.

In the second week of term, most first-year students in self-catered halls received a complimentary box of local organic veg, with recipe suggestions and online advice and encouragement. The boxes, which included potatoes, tomatoes, courgettes, garlic, greens and UK-grown pulses, contained all the veg needed to make vegetable curry, sag aloo, dahl and salad.

Amy Shadbolt of Veg Box People said: “We are hoping our new Mancunians will take advantage of this opportunity to chop, cook, eat and (of course) clear up together, to get to know their new flatmates better. And we are asking them to share their culinary masterpieces or cooking disasters online using the hashtag #VegOutTogether.

“To add a bit of an edge to the competition, one lucky flat from each hall will win a weekly veg bag, so perhaps a healthy night vegging in together will become a regular thing.”
