Cool down on warm days with this refreshing homemade nectarine iced tea, infused with sweet ripe fruit and fragrant fresh mint. Naturally vibrant, it’s the perfect drink for garden gatherings, or after a shift at the allotment.

- 3 ripe nectarines, sliced
- 1 litre water
- 3 black tea bags
- 3 tbsp honey (or to taste)
- 1 small bunch fresh mint, plus extra to serve
- Ice cubes, to serve
- Lemon slices, to serve (optional)
- Bring 500ml (17½fl oz) of the water to a boil. Add the tea bags and steep for 5 minutes, then remove the bags.
- Stir in the honey while the tea is still warm. Set aside to cool slightly.
- In a large jug, combine the sliced nectarines, mint leaves, and the remaining 500ml (17½fl oz) cold water.
- Pour the brewed tea into the jug and stir well.
- Refrigerate for at least 1–2 hours to chill and allow the flavours to infuse.
- Serve over ice with extra mint sprigs and lemon slices if desired.
TOP TIPS
- For a lighter taste, swap black tea for green tea or white tea.
- Add a splash of sparkling water just before serving for a fizzy twist.
- Swap honey for agave syrup to make the recipe vegan-friendly.
- Try adding a few crushed raspberries or slices of ginger for extra flavour.
